Steps
Steps
- 1Soak the bread in the milk for 5 minutes, then squeeze it out well.
- 2Check the fish for pin bones, cut it into pieces and pulse in a food processor until coarsely minced, or chop it finely with a heavy knife — a smooth paste makes rubbery kyufteta.
- 3Squeeze the grated onion in your hand to remove the excess juice, then mix it with the fish, bread, egg, three-quarters of the dill, 1 tsp of the salt and the pepper.
- 4Chill the mixture for 30 minutes so it firms up.
- 5With wet hands shape 12 flat patties about 1.5 cm thick and roll them in the breadcrumbs.
- 6Heat the oil in a frying pan over medium heat and fry the patties for 3–4 minutes per side, until golden and firm to the touch. Drain on kitchen paper.
- 7For the sauce, mix the yoghurt with the garlic, the remaining dill and the remaining salt.
- 8Serve the kyufteta hot or warm with the sauce.
