Steps

  1. 1
Take the beef out of the fridge 1 hour before roasting and heat the oven to 230°C.
  2. 2
Pat the beef dry, rub it with the oil, salt and pepper, then spread the mustard over the fat and top and sprinkle with the thyme.
  3. 3
Lay the onions, carrots and garlic in a roasting tin as a rack and set the beef on top.
  4. 4
Roast for 20 minutes to brown, then lower the oven to 180°C and roast for 30–40 minutes more for medium-rare, until a thermometer in the centre reads 52°C; it climbs about 4°C as it rests.
  5. 5
Lift the beef onto a board, cover loosely with foil and rest for 30 minutes. Resting lets the juices settle, so they stay in the meat when you carve.
  6. 6
For the gravy, spoon the fat from the tin, leaving 1 tbsp, set the tin over medium heat and stir the flour into the vegetables for 1 minute. Pour in the wine and bubble for 2 minutes, scraping the tin, then add the stock and any resting juices and simmer for 5–8 minutes. Strain and season.
  7. 7
Carve the beef thinly across the grain and serve with the gravy and horseradish.
