Steps
Steps
- 1Put the beef in a large pot with the water, bay leaves, halved onion and salt. Bring to a simmer, skim, partly cover and cook for 2 hours, until the meat pulls apart easily.
- 2Let the beef cool in its liquid for 20 minutes so it stays juicy, then lift it out and shred it along the grain into long strands with two forks. Strain the broth and keep 400 ml.
- 3Heat the olive oil in a wide pan over medium heat and cook the sliced onion and the peppers for 10 minutes, until soft and sweet.
- 4Add the garlic, cumin, oregano and tomato purée and cook for 2 minutes.
- 5Pour in the wine and let it bubble for 1 minute, then add the tomatoes and 300 ml of the broth and simmer for 10 minutes.
- 6Stir in the shredded beef and the olives and simmer uncovered for 20 minutes, until the sauce clings to the strands; loosen with more broth if needed and season.
- 7Scatter with parsley and serve with the rice and warm black beans.
