Steps
Steps
- 1Lay the beef slices flat and beat them to 5 mm if they are thicker. Season with salt and pepper and spread each with ½ tbsp mustard.
- 2Lay a bacon slice along each, scatter over the sliced onion and set a strip of gherkin across the short end.
- 3Roll each slice up tightly from the gherkin end, folding in the sides as you go, and secure with cocktail sticks or kitchen string.
- 4Heat the oil in a casserole over medium-high heat and brown the rolls on all sides for 8 minutes; lift them out.
- 5Add the chopped onion, carrot and celeriac and fry for 6 minutes until browned, then stir in the tomato purée for 1 minute.
- 6Pour in the wine, scrape up the browned bits and reduce by half for 3 minutes. Add the stock and bay leaf, return the rolls, cover and simmer gently for 1½ hours, turning them halfway, until tender.
- 7Lift out the rolls and remove the sticks or string. Strain or blend the sauce, bring it to the boil, whisk in the cornflour mixture and simmer for 2 minutes until glossy; season.
- 8Return the rolls to the sauce to heat through and serve hot.
