Steps
Steps
- 1Toss the pork and chicken with 2 tbsp of the oil, the paprika, savory, pepper and 1 tsp salt, and leave for 20 minutes while you prepare the vegetables.
- 2Heat a cast-iron sach or a large cast-iron frying pan over high heat for 5 minutes until very hot — a drop of water should skitter and vanish.
- 3Add 1 tbsp oil and sear the meat in two batches, without stirring, for 2 minutes, then turn and cook 2 minutes more until browned; set aside. Searing in batches keeps the iron hot, so the meat fries instead of stewing in its juices.
- 4Add the remaining oil and the mushrooms and fry over high heat for 4–5 minutes until their water has evaporated and they brown.
- 5Add the onions and peppers and stir-fry for 5 minutes until softened but still with some bite and charred in places.
- 6Add the garlic, chilli, tomatoes and remaining salt and cook for 2 minutes.
- 7Return the meat with its juices and toss everything together for 3–4 minutes until the meat is cooked through.
- 8Scatter with parsley and bring the sach to the table on a wooden board while it is still sizzling, with bread or parlenka flatbread.
