Steps
Steps
- 1Heat the grill to high. Toast the walnuts in a dry frying pan for 3–4 minutes and chop them roughly.
- 2Cut the goat's cheese into 8 rounds about 1.5 cm thick. Lay the baguette slices on a baking tray and set a round of cheese on each.
- 3Drizzle the cheese with the honey and sprinkle with the thyme.
- 4Grill for 4–5 minutes, until the cheese has slumped and browned at the edges and the bread is crisp. Watch it: the cheese should soften, not melt into a puddle.
- 5Meanwhile, whisk the vinegar, mustard, salt and pepper, whisk in the oil and toss the leaves in the dressing.
- 6Divide the leaves among plates, set two cheese toasts on each, scatter with the walnuts and serve while the cheese is warm.
