Steps

  1. 1
Discard the dark green outer leaves of the frisée and tear the pale heart into bite-sized pieces. Wash, spin completely dry and put in a large bowl.
  2. 2
Fry the lardons in a dry frying pan over medium heat for 8–10 minutes, until browned and crisp and most of their fat has rendered. Lift them out with a slotted spoon and pour 2 tbsp of the fat into a cup for the dressing.
  3. 3
Fry the bread cubes in the fat left in the pan for 3–4 minutes, turning, until golden on every side, then drain on kitchen paper.
  4. 4
Bring a wide pan of water to a bare simmer and add 1 tbsp of the vinegar. Crack each egg into a cup, slide it into the water and poach for 3 minutes, until the white is set and the yolk still runny. Lift out onto kitchen paper.
  5. 5
Whisk the shallot, mustard and the remaining 3 tbsp of vinegar with a pinch of salt and pepper, then whisk in the olive oil and the warm bacon fat.
  6. 6
Pour the warm dressing over the frisée and toss: the leaves should wilt only at the edges, and the warm fat is what tames the chicory's bitterness. Toss in the lardons and croutons.
  7. 7
Divide among plates, set a poached egg on each, grind over black pepper and serve at once, so the yolk breaks into the leaves.
