Steps

  1. 1
Boil the potatoes and carrots whole in their skins for 20–25 minutes, until tender, then cool and peel. Hard-boil the eggs for 10 minutes, cool them in cold water, peel and separate the whites from the yolks.
  2. 2
Remove any large bones from the fish and mash it with a fork. Chop the onion finely, pour boiling water over it, leave for 1 minute and drain: this takes away its raw sharpness.
  3. 3
Grate the potatoes, carrots, egg whites and cheese separately on the coarse side of a grater. Grate the yolks last, on the fine side.
  4. 4
In a glass bowl or a 20 cm ring, layer the potatoes, salted lightly, then the fish with the onion, the carrots, the cheese and the egg whites, spreading a thin coat of mayonnaise over each layer. Spread it with the back of a spoon without pressing down: the salad should stay light and airy.
  5. 5
Cover the top with the grated yolks: the yellow crumbs give the salad its mimosa look. Decorate with the dill sprigs.
  6. 6
Chill for at least 4 hours, or overnight, so the layers settle and the mayonnaise soaks in.
