Steps
Steps
- 1Blend the tomatoes until completely liquid, then pass them through a sieve to remove the skins and seeds.
- 2Tear the bread into the tomato juice and leave it to soak for 10 minutes.
- 3Add the garlic, vinegar and salt and blend on full speed for 2 minutes.
- 4With the motor running, pour in the olive oil in a slow, thin stream, keeping back 2 tbsp for serving, until the cream turns pale orange and thick enough to hold a spoon's trail — the oil emulsion is what gives salmorejo its body.
- 5Taste and adjust the salt and vinegar, then chill for at least 2 hours.
- 6Hard-boil the eggs for 10 minutes, cool and peel them, then chop them finely.
- 7Serve in chilled bowls topped with the chopped egg, the ham and a drizzle of the reserved olive oil.
