Steps
Steps
- 1Cook the onions in the oil over medium-low heat for 10 minutes, until soft and translucent but not coloured.
- 2Grind the walnuts with the garlic in a food processor — or, traditionally, twice through a mincer — to a fine, oily paste. The finer the grind, the silkier the sauce.
- 3Add the blue fenugreek, ground coriander, marigold, cinnamon, cloves, cayenne and a little salt, then the onions, and grind again until smooth.
- 4Warm the stock and work it into the walnut paste a ladleful at a time, until the sauce has the thickness of double cream.
- 5Pour it into a pan and bring just to a simmer over low heat, stirring; cook for 5 minutes, no longer — boiling makes walnuts bitter and splits the sauce.
- 6Off the heat, stir in the vinegar and adjust the salt. The sauce thickens as it cools; loosen it with a little more stock if needed.
- 7Serve it cold or at room temperature, ideally the day after making, when the spices have settled. It keeps for three days in the fridge.
