Scones
The centrepiece of a British cream tea — light, tall scones made with cold butter and a quick, gentle hand, split while warm and spread with jam and clotted cream. Cutting straight down without twisting lets them rise evenly.

Steps
Steps
- 1Heat the oven to 220°C (200°C fan) and put a baking tray inside to heat.
- 2Mix the flour, baking powder and salt, rub in the butter until the mixture looks like fine crumbs, then stir in the sugar.
- 3Warm the milk until just lukewarm and stir in the lemon juice and vanilla; it will curdle slightly, which is what you want.
- 4Make a well in the flour, pour in the milk and mix quickly with a table knife into a soft, slightly sticky dough. Do not knead.
- 5Tip onto a floured worktop, fold it over two or three times until a little smoother, then pat it out 4 cm thick.
- 6Cut out rounds with a floured 5 cm cutter, pressing straight down without twisting. Press the trimmings together gently and cut more.
- 7Brush only the tops with beaten egg and set the scones close together on the hot tray.
- 8Bake for 10–12 minutes, until risen and golden. Serve warm, split, with the jam and clotted cream.
