Steps
Steps
- 1Lower 6 of the eggs into boiling water and cook for exactly 6½ minutes, then plunge them into iced water for 10 minutes and peel carefully.
- 2Mix the sausage meat with the sage, parsley, mustard and a pinch each of salt and pepper, and divide it into 6 equal portions of about 75 g.
- 3Flatten each portion on a piece of cling film into a thin oval. Dust an egg with flour, set it on the meat and use the film to wrap the meat around it, sealing the seams so there are no cracks.
- 4Beat the remaining egg. Roll each wrapped egg in flour, then egg, then crumbs; repeat the egg and crumbs for a thick crust, and chill for 20 minutes.
- 5Heat the oil in a deep pan to 170°C and fry the eggs 2 or 3 at a time for 7–8 minutes, turning, until deep golden and the sausage meat is cooked through (72°C).
- 6Drain on a rack, rest for 5 minutes, then halve and serve warm or cold.
