Steps
Steps
- 1Soak the wakame in a bowl of cold water for 5–10 minutes, until it has swollen to about ten times its size and turned bright green. Drain, squeeze gently, cut out any tough central ribs and chop into bite-sized strips.
- 2Slice the cucumber paper-thin, toss with the salt, leave for 5 minutes and squeeze out the water.
- 3Whisk the vinegar, soy sauce, sesame oil, sugar and ginger until the sugar dissolves.
- 4Toss the wakame and cucumber with the dressing, scatter with the sesame seeds and spring onion and serve chilled. Eat it the same day: the seaweed keeps softening in the vinegar.
