Steps
Steps
- 1Put the beef in a large pot with the cold water, bring slowly to the boil and skim off the foam.
- 2Add the bay leaves, peppercorns and salt and simmer gently, half-covered, for 1 hour 30 minutes, until the beef is tender.
- 3Lift out the beef, cut the meat into pieces and discard the bone; strain the broth back into the pot.
- 4Bring the broth to the boil, add the cabbage and simmer 10 minutes, then add the potatoes and simmer 15 minutes more.
- 5Meanwhile heat the oil in a frying pan and soften the onion and carrot for 8 minutes, then add the tomatoes and cook 5 minutes until thick.
- 6Stir the fried vegetables and the beef into the pot and simmer 5 minutes.
- 7Add the garlic, take off the heat and leave covered for 20 minutes — shchi needs a rest to come together.
- 8Serve with a spoon of soured cream and a scattering of dill.
