Steps

  1. 1
Heat the oil in a wide pan over high heat and brown the lamb in two batches for 8–10 minutes, breaking it up, until deep brown and crisp in places. Spoon off the excess fat: browned, not grey, mince is where the flavour comes from.
  2. 2
Lower the heat to medium, add the onion and carrots and cook for 8 minutes until soft. Add the garlic and tomato purée and cook for 2 minutes.
  3. 3
Sprinkle in the flour, stir for 1 minute, then add the stock, Worcestershire sauce and thyme. Simmer, partly covered, for 30 minutes until thick and glossy, and season with salt and pepper.
  4. 4
Meanwhile, peel the potatoes, cut them into chunks and boil in salted water for 15–20 minutes until tender. Drain well and let them steam dry for 2 minutes.
  5. 5
Mash with the butter and the warmed milk until smooth, then beat in the egg yolk and season. The yolk helps the top brown.
  6. 6
Heat the oven to 200°C. Spread the lamb in a 2-litre ovenproof dish and let it cool a little, so the mash sits on top instead of sinking.
  7. 7
Spoon the mash over in dollops, spread it to the edges to seal in the filling and rough up the surface with a fork.
  8. 8
Bake for 25–30 minutes, until the ridges are golden and the filling bubbles at the edges. Rest for 10 minutes before serving.
