The Persian table salad — cucumber, tomato and onion in the finest possible dice, with dried mint and lime.

Ingredients

Serves:4
  • 3 pieces cucumbers
  • 3 pieces tomatoes, firm
  • 0.5 pieces red onion
  • 1 tsp dried mint
  • 3 tbsp lime juice
  • 3 tbsp extra virgin olive oil
  • 0.75 tsp salt
  • 0.25 tsp black pepper

    Peel the cucumbers if the skin is thick, then dice them into pieces no bigger than 5 mm.

    Deseed the tomatoes and dice them the same size — the seeds are what make this salad watery.

    Dice the onion finer still, then rinse it under cold water and pat it dry.

    Combine the vegetables in a bowl.

    Crush the dried mint between your palms as you add it, to wake up the oil in the leaves. Dried mint, not fresh, is what makes this Shirazi.

    Add the lime juice, oil, salt and pepper and toss.

    Chill 20 minutes and drain off any liquid before serving alongside rice or kebabs.
