A no-bake log of chocolate, butter and broken biscuits studded with walnuts and Turkish delight, rolled in icing sugar and sliced like a salami — a childhood favourite across Bulgaria. Breaking the biscuits by hand, not crushing them, gives the marbled slices.

  • 100 g Turkish delight, diced
  • 150 g butter

Steps

  1. 1
Break the biscuits by hand into pieces from pea to hazelnut size and put them in a bowl with the walnuts and Turkish delight — crumbs make a solid log with none of the salami look.
  2. 2
Melt the butter with the sugar and milk in a pan over low heat, stirring until the sugar dissolves, and bring just to a simmer.
  3. 3
Take off the heat, add the chocolate and cocoa and stir until smooth and glossy.
  4. 4
Pour over the biscuit mixture, stir to coat everything and leave for 10–15 minutes to cool and thicken.
  5. 5
Divide in two, tip each half onto a sheet of cling film and shape into a log about 5 cm thick, rolling it tightly and twisting the ends.
  6. 6
Chill for 4 hours, or freeze for 1 hour, until firm.
  7. 7
Unwrap, roll the logs in icing sugar so they look like a cured salami with its white bloom, and cut into 1 cm slices with a sharp knife.
