  • 400 g Bulgarian sirene, in thick slabs
  • 2 pieces eggs
  • 80 g plain flour
  • 120 g fine breadcrumbs
  • 300 ml sunflower oil, for frying
  • 0.5 tsp black pepper
  • 2 pieces lemon wedges

    Cut the sirene into slabs about 1.5 cm thick. Thinner than that and it collapses in the pan.

    Pat each slab completely dry with kitchen paper — surface moisture makes the coating slide off.

    Set out flour, beaten egg seasoned with pepper, and breadcrumbs in three dishes.

    Coat each slab in flour, then egg, then crumbs, then egg and crumbs a second time. The double coat is what contains the cheese.

    Chill the breaded slabs for 20 minutes to set the crust.

    Fry in hot oil for about 1 minute per side, until golden. Any longer and the cheese escapes.

    Drain briefly on paper and serve immediately with lemon.
