- 80 g plain flour
- 120 g fine breadcrumbs
- 300 ml sunflower oil, for frying
- 0.5 tsp black pepper
- 2 pieces lemon wedges

- 1Cut the sirene into slabs about 1.5 cm thick. Thinner than that and it collapses in the pan.
- 2Pat each slab completely dry with kitchen paper — surface moisture makes the coating slide off.
- 3Set out flour, beaten egg seasoned with pepper, and breadcrumbs in three dishes.
- 4Coat each slab in flour, then egg, then crumbs, then egg and crumbs a second time. The double coat is what contains the cheese.
- 5Chill the breaded slabs for 20 minutes to set the crust.
- 6Fry in hot oil for about 1 minute per side, until golden. Any longer and the cheese escapes.
- 7Drain briefly on paper and serve immediately with lemon.
