Steps
Steps
- 1Rub the inside of four individual clay pots (gyuvecheta) with a little of the butter.
- 2Put a slab of sirene in the bottom of each pot, layer the tomato slices and pepper rings on top and dot with the rest of the butter in small pieces.
- 3Sprinkle the paprika over the butter so it colours the juices as it melts, then cover the pots with their lids or with foil.
- 4Set the pots in a cold oven and only then turn it on to 200°C/400°F — clay put straight into a hot oven can crack.
- 5Bake for 20 minutes, until the cheese has softened and the butter and tomato juices bubble at the edges.
- 6Uncover, crack an egg into each pot and bake uncovered for another 6–8 minutes, until the white has set and the yolk is still runny.
- 7Scatter with the parsley and serve at once in the hot pots, with the bread for dipping into the juices.
