Steps
Steps
- 1Pick the flower heads on a dry, sunny morning, away from roads, when the flowers are fully open and creamy. Use only the elder shrub or small tree: the low, herbaceous dwarf elder is poisonous.
- 2Shake out any insects but don't wash the flowers, or you rinse away the pollen that carries the flavour. Trim off the thick, bitter stalks.
- 3Bring the water to the boil with the sugar, stirring until it dissolves, then take off the heat and stir in the citric acid.
- 4Put the flowers and lemon slices in a large bowl or pot, pour over the hot syrup and press them under. Cover with a cloth and leave in a cool place for 48 hours, stirring once a day.
- 5Strain through a sieve lined with muslin, pressing on the flowers, and bring the cordial back to a simmer.
- 6Pour into hot sterilised bottles and seal. To serve, dilute one part cordial with five or six parts cold water.
