Steps
Steps
- 1Rinse the mackerel inside and out, pat completely dry and cut 3 shallow diagonal slashes on each side so the heat reaches the thickest part.
- 2Season inside and out with 1 tsp of the salt and the pepper, then brush all over with the sunflower oil.
- 3Heat a charcoal grill or a ridged grill pan over high heat until very hot and oil the grates — fish sticks to a grill that is not hot enough.
- 4Grill the mackerel for 5–6 minutes without moving them, until the skin is charred and lifts away from the grill by itself.
- 5Turn carefully with a wide spatula and grill for 4–5 minutes more, until the flesh at the backbone is opaque.
- 6Meanwhile mix the olive oil, garlic, parsley, lemon juice and remaining salt.
- 7Spoon the dressing over the hot fish and serve at once with the lemon wedges.
