Steps
Steps
- 1Heat the oil in a frying pan over medium heat and soften the onion for 6 minutes.
- 2Add the pickled cucumbers and cook 5 minutes, then stir in the tomato paste and cook 2 minutes more, until it darkens.
- 3Add the smoked sausage, ham and frankfurters and fry 3–4 minutes, so they release their smoky fat into the base.
- 4Bring the stock to the boil in a large pot, add the contents of the pan, the beef and the bay leaves and simmer 10 minutes.
- 5Add the brine a little at a time, tasting: the soup should be pleasantly sour and salty, and brines vary in strength, so don't pour it all in at once.
- 6Add the olives and capers and simmer 5 minutes more; season with black pepper only — it rarely needs salt.
- 7Take off the heat, cover and rest 10 minutes.
- 8Serve each bowl with a slice of lemon, a spoon of soured cream and a scattering of dill.
