Steps
Steps
- 1Heat the oven to 200°C with a baking tray on the middle shelf. Brush a 1.5 litre soufflé dish with 10 g of the butter, softened, in upward strokes, and coat it with the finely grated hard cheese.
- 2Melt the remaining 40 g of butter in a saucepan, stir in the flour and cook for 1 minute, then whisk in the milk and simmer for 2 minutes until very thick.
- 3Take off the heat and beat in the egg yolks one at a time, then the Gruyère, mustard, nutmeg, cayenne and a good pinch of salt. It should taste slightly over-seasoned.
- 4In a clean, grease-free bowl whisk the egg whites with a pinch of salt to firm peaks that stand up but still look glossy, not dry.
- 5Stir a quarter of the whites into the base to loosen it, then fold in the rest gently with a large metal spoon, keeping in as much air as you can.
- 6Pour into the dish, level the top and run your thumb around the inside of the rim to make a groove, so the soufflé rises straight up with a crown.
- 7Set it on the hot tray, lower the oven to 190°C and bake for 25–28 minutes without opening the door, until well risen and golden with a slight wobble at the centre.
- 8Serve immediately — a soufflé starts to sink within minutes.
