Steps
Steps
- 1Trim any thick sinew from the pork but keep the fat, which bastes the meat on the grill, and cut it into even 3 cm cubes.
- 2Whisk 60 ml of the olive oil with the lemon juice, garlic, oregano, salt and pepper, add the pork, toss to coat and marinate in the fridge for at least 2 hours, ideally overnight.
- 3Thread the pork onto 8 skewers, 5–6 cubes each, pressed close together but not crammed; keep the leftover marinade.
- 4Heat a charcoal grill or ridged grill pan over high heat until very hot.
- 5Grill the skewers for 10–12 minutes, turning every 2–3 minutes and brushing them once or twice with the marinade in the first half of cooking, until charred at the edges and cooked through, with clear juices.
- 6Rest the skewers for 3 minutes while you brush the pita with the remaining olive oil and warm it on the grill for 30 seconds a side.
- 7Serve the skewers on the warm pita with a generous spoonful of tzatziki, the tomatoes, red onion and parsley, and lemon wedges for squeezing.
