Steps
Steps
- 1Heat the oil in a large pot over medium heat and soften the onion, carrots and celery for 8 minutes.
- 2Add the ham hock, split peas, bay leaves, thyme and water. Bring to the boil, skimming off any foam.
- 3Simmer gently, half-covered, for 1 hour 30 minutes, stirring now and then and more often towards the end, as the peas catch on the bottom once they thicken.
- 4Lift out the hock and let it cool a little. Remove the bay leaves and thyme stalks.
- 5Strip the meat from the hock in small pieces, discarding the skin, fat and bone.
- 6Whisk the soup hard, or blend half of it, for a smoother texture — split peas need no soaking and fall apart on their own.
- 7Return the meat, season with pepper and taste before adding any salt, as the hock is salty.
- 8Serve hot.
