Steps
Steps
- 1Toss the beef with the flour, salt and pepper. Heat 2 tbsp of the oil in a heavy casserole over high heat and brown the beef in 3 batches, 5 minutes each, until deep brown. Lift it out.
- 2Lower the heat to medium, add the remaining oil, the onions and mushrooms and cook for 8–10 minutes until browned. Add the garlic and tomato purée for 1 minute.
- 3Pour in the ale and scrape up the browned bits, then add the stock, Worcestershire sauce, thyme, bay leaves and sugar and return the beef. Bring to a simmer.
- 4Cover and cook in a 160°C oven for 2–2½ hours, until the beef is tender and the gravy thick; if it is still thin, simmer it uncovered on the hob for 10 minutes.
- 5Remove the thyme stalks and bay leaves and let the filling cool completely, ideally overnight. A hot filling makes the pastry soggy.
- 6Heat the oven to 200°C. Spoon the filling into a 1.5-litre pie dish, cover with the pastry, trim, press it onto the rim, brush with egg and cut a steam hole.
- 7Bake for 30–35 minutes until puffed and deep golden, and rest for 5 minutes before serving.
