Steps
Steps
- 1Crush the peppercorns coarsely in a mortar or under a heavy pan — you want cracked pieces, not powder, which would make the steak acrid.
- 2Pat the steaks dry, season with salt and press the pepper firmly into both sides.
- 3Heat the oil in a heavy frying pan over high heat until it shimmers, add the butter and then the steaks, and sear for 3–4 minutes per side for medium-rare, basting with the foaming butter.
- 4Transfer the steaks to a warm plate and rest for 5 minutes while you make the sauce.
- 5Lower the heat, add the shallot to the pan and cook for 1 minute. Pour in the cognac and carefully set it alight, or simply let it bubble for 1 minute.
- 6When the flames die down, add the cream and any juices from the resting steaks and simmer for 2–3 minutes, scraping up the pepper and browned bits, until the sauce coats a spoon. Season with salt.
- 7Pour the sauce over the steaks and serve at once.
