Steps

  1. 1
Chill the beef, a chopping board and a mixing bowl well; everything should stay cold.
  2. 2
Trim every trace of fat and sinew from the fillet, then cut it into thin slices, the slices into strips and the strips into 3–4 mm dice with a very sharp knife. A mincer or food processor would mash the meat to a paste.
  3. 3
In the cold bowl, mix the mustard, Worcestershire sauce, Tabasco, oil and a pinch of salt and pepper.
  4. 4
Add the beef, shallots, capers, cornichons and parsley and fold together lightly with a fork. Taste and adjust — it should be well seasoned and sharp.
  5. 5
Divide among four cold plates and shape each portion into a neat round with a ring or your hands, then make a hollow in the top and slip in an egg yolk.
  6. 6
    Toast the sourdough until crisp.
  7. 7
Serve at once with the toast, letting each diner break the yolk and mix it through.
