Steps
Steps
- 1Pat the beef dry and season it with the salt and pepper.
- 2Heat half the olive oil in a heavy casserole over high heat and brown the beef in two batches, 5–6 minutes each, until deeply coloured on all sides; lift it out.
- 3Lower the heat to medium, add the rest of the oil and the shallots and fry them for 8–10 minutes, shaking the pan, until golden all over; lift them out and set aside.
- 4Add the garlic and tomato paste and stir for 1 minute until the paste darkens, then pour in the wine and vinegar and scrape up the browned bits from the bottom.
- 5Return the beef with the chopped tomatoes, cinnamon, cloves, allspice, bay leaves, sugar and hot water, bring to a simmer, cover and cook on the lowest heat for 1 hour 30 minutes.
- 6Lay the shallots over the meat, cover again and cook for 45–60 minutes more without stirring — just shake the pot — so the onions stay whole, until the beef is tender and the sauce thick and glossy.
- 7If the sauce is still thin, uncover it for the last 15 minutes. Fish out the cinnamon stick and bay leaves, rest for 10 minutes and serve.
