Steps

  1. 1
Soak the raisins and candied peel in the rum for at least 2 hours, or overnight.
  2. 2
Mix the flour, yeast, sugar, salt, cardamom, nutmeg and lemon zest. Add the milk, egg and softened butter and knead for 8–10 minutes into a soft, smooth dough.
  3. 3
Knead in the drained fruit and the almonds until evenly spread, without overworking. Cover and leave to rise somewhere warm for 1½–2 hours; a rich dough rises slowly.
  4. 4
Roll the marzipan into a 25 cm log.
  5. 5
Press the dough out into a 25 × 20 cm oval and lay the marzipan along it just off centre. Fold the wider side over, leaving the edge of the lower layer showing, and press along the fold to make the classic ridge.
  6. 6
Set on a lined tray, cover and prove for 1 hour. Heat the oven to 180°C (160°C fan).
  7. 7
Bake for 35–40 minutes, until golden and hollow-sounding underneath; pick off any fruit that burns on the surface.
  8. 8
While it is hot, brush the stollen generously with the melted butter and sift over a thick layer of icing sugar. Repeat once it has cooled, for a heavy white crust.
  9. 9
Wrap in baking paper and foil and leave for at least 3 days before slicing.
