- 120 g very ripe banana, mashed
- 3 eggs
- 28 g butter, melted
- 50 g granulated sweetener
- 2 tsp cinnamon
- 1 tsp baking powder
- 30 g walnuts, crushed

- 1Preheat oven to 180C/356F. Line a 18x9cm loaf pan with parchment paper.
- 2Beat eggs, mashed banana and melted butter together with an electric mixer until smooth.
- 3In a separate bowl, mix almond flour, sweetener, cinnamon and baking powder. Add to the egg mixture and blend until combined.
- 4Stir in the crushed walnuts, reserving some to sprinkle on top.
- 5Pour the batter into the prepared loaf pan and scatter remaining walnuts on top.
- 6Bake about 40 minutes. Check at 30 minutes — if the top is already browning, cover loosely with foil.
- 7Cool completely in the pan before slicing. The bread is fragile when hot.
