Frozen cheesecake bites dipped in a dark chocolate shell. Make ahead and keep in the fridge — an irresistible bite-sized treat with no added sugar.

  • 100 g almond flour (base)
  • 30 g butter, melted (base)
  • 1 tbsp powdered sweetener (base)
  • 300 g cream cheese
  • 60 g powdered erythritol
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • 100 g dark chocolate 85%+ for coating

    Combine almond flour, melted butter and sweetener; press into the base of a silicone mould or mini muffin tin to form small bases.

    Beat cream cheese, erythritol, vanilla extract and lemon juice until completely smooth.

    Spoon the filling on top of each base. Freeze for 2 to 3 hours until solid.

    Melt dark chocolate in a bain marie; let cool slightly.

    Dip the frozen cheesecake bites in the melted chocolate and place on a parchment-lined tray.
