Gooey keto cinnamon rolls with a cream cheese glaze. Made with fathead dough — soft and fluffy on the inside with caramelised cinnamon edges.

  • 200 g almond flour (dough)
  • 60 g cream cheese (dough)
  • 1 egg (dough)
  • 1 tsp baking powder (dough)
  • 40 g butter, softened (filling)
  • 60 g granulated sweetener (filling)
  • 2 tsp cinnamon (filling)
  • 60 g cream cheese, softened (glaze)
  • 40 g powdered sweetener (glaze)
  • 2 tbsp heavy cream (glaze)
  • 0.5 tsp vanilla extract (glaze)

    Preheat oven to 200C/390F. Mix sweetener and cinnamon for the filling; set aside.

    Melt mozzarella and cream cheese in the microwave (1 minute, stir, then 30 seconds more) until smooth and fully melted.

    Add almond flour, egg and baking powder to the cheese mixture; quickly knead into a smooth dough while it is still warm.

    Place the dough between two sheets of parchment paper and roll out into a rectangle of about 30x22cm.

    Spread softened butter over the dough and sprinkle the cinnamon-sweetener mixture evenly on top.

    Roll up tightly from the long side; slice into 12 rolls and place cut-side down in a lined baking tin.

    Bake 18 to 20 minutes until golden brown.
