Light and fluffy low-carb pancakes made with coconut flour. Only 6 ingredients and under 20 minutes from start to finish.

  • 28 g coconut flour
  • 3 eggs, large
  • 2 tbsp butter or coconut oil, melted
  • 84 ml almond milk, unsweetened
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tbsp powdered sweetener (optional)
  • 1 tbsp extra butter or oil for frying

    Beat the eggs until frothy with a whisk or hand mixer. Add the remaining ingredients and beat until smooth. Let the batter rest for 2 minutes.

    Melt butter in a non-stick skillet over low heat. Spoon 2 tablespoons of batter per pancake and spread slightly with the back of the spoon. Cook 2 to 3 pancakes at a time.

    Fry on low heat for about 3 minutes until bubbles appear on the surface. Do not move them during this time.

    Flip and cook for a further minute until golden on both sides. Repeat with the remaining batter.
