Steps
Steps
- 1Make small cuts along the beef with a thin knife and push the bacon strips into them, so the lean meat is basted from inside. Rub it all over with the salt and ground pepper. Heat the oven to 160°C/320°F.
- 2Melt the butter in a heavy flameproof casserole over medium-high heat and brown the beef on all sides for 8 minutes; lift it out.
- 3Add the onion, carrots, celeriac and parsley root and fry for 10 minutes, until the vegetables are golden at the edges.
- 4Add the allspice, peppercorns, bay leaves, vinegar, sugar and hot water, return the beef, cover and braise in the oven for 2 hours, turning the meat once, until tender.
- 5Lift the beef out and keep it warm under foil. Fish out the bay leaves, allspice and peppercorns.
- 6Whisk the flour into the cream, stir it into the vegetables and liquid and simmer for 5 minutes, then blend until completely smooth and pass through a sieve.
- 7Season the sauce with the mustard and lemon juice: it should be creamy, gently sweet and gently sour.
- 8Steam the dumplings for 10 minutes to warm them, slice the beef and serve with plenty of sauce, the dumplings and a spoonful of cranberry sauce.
