Steps

  1. 1
Wash the leeks thoroughly after cutting: separate the rings in a bowl of cold water so the grit sinks, then lift them out into a colander.
  2. 2
Season the pork with 1 tsp of the salt. Heat the oil in a heavy casserole over high heat and brown the pork in two batches, 5–6 minutes each, until coloured on all sides.
  3. 3
Return all the pork to the pan, take it off the heat and stir in the paprika and tomato purée for 30 seconds — off the heat the paprika colours the fat without scorching.
  4. 4
Pour in 400 ml of the hot water, add the bay leaves and bring to the boil, then cover and simmer gently for 45 minutes, until the pork is almost tender.
  5. 5
Add the leeks, the pepper and the remaining salt, stir, and pour in the rest of the water if the pan looks dry.
  6. 6
Cover and simmer for 30–35 minutes more, stirring now and then, until the leeks have collapsed and the pork yields to a spoon — the leeks should melt into the sauce, not stay crisp.
  7. 7
If the sauce is thin, uncover for the last 5 minutes; it should coat the meat rather than pool around it.
  8. 8
Remove the bay leaves, rest for 5 minutes and serve hot.
