Steps

  1. 1
Soak the prunes in the wine for 30 minutes while you prepare the meat — they plump up and give their sweetness to the wine.
  2. 2
Season the pork with 1 tsp of the salt. Heat the oil in a heavy casserole over high heat and brown the pork in two batches, 5–6 minutes each, until deeply coloured; set aside.
  3. 3
Lower the heat to medium, add the onions and cook for 8 minutes until soft and golden.
  4. 4
Add the tomato purée and stir for 1 minute, then take the pan off the heat and stir in the paprika.
  5. 5
Return the pork, pour in the wine from the prunes, setting the prunes aside, and let it bubble for 3 minutes over medium heat.
  6. 6
Add the hot water, bay leaves, allspice, pepper and remaining salt, bring to the boil, cover and simmer gently for 1 hour.
  7. 7
Add the prunes and simmer covered for 30 minutes more, uncovering for the last 10 minutes, until the pork is tender and the prunes have partly melted into a thick, glossy sauce.
  8. 8
Remove the bay leaves and rest for 10 minutes before serving.
