A Bulgarian winter staple — chunks of pork shoulder baked slowly with chopped sauerkraut, onion and paprika, so the pork fat softens the sourness of the cabbage and the top browns while the meat turns fork-tender.

Steps

  1. 1
Heat the oven to 180°C. Taste the sauerkraut: if it is very sour or salty, rinse it briefly in cold water and squeeze it out, then chop it into 1 cm strips.
  2. 2
Season the pork with the salt and brown it in the fat in a heavy pan over high heat, in two batches, 5–6 minutes per batch until coloured on all sides. Transfer to a deep baking dish or clay pot.
  3. 3
Lower the heat to medium, add the onion to the pan and fry for 5 minutes until soft.
  4. 4
Add the sauerkraut and stir-fry for 5 minutes so it takes up the fat.
  5. 5
Take the pan off the heat, stir in both paprikas and the peppercorns, then mix the cabbage with the pork in the dish and tuck in the bay leaves.
  6. 6
Pour in the hot water (or water mixed with a little sauerkraut brine) — it should come about two-thirds of the way up the contents, not cover them.
  7. 7
Cover with a lid or foil and bake for 1 hour 30 minutes, until the pork yields when pressed with a spoon.
  8. 8
Uncover, stir once and bake for another 30 minutes until the liquid has mostly gone and the cabbage on top has browned at the edges — this final dry bake is what gives the dish its depth.
  9. 9
Rest for 10 minutes and serve hot.
