Syrniki

Russian and Ukrainian curd-cheese pancakes — thick little rounds of dry curd cheese bound with an egg and a little flour, fried golden in butter and served with sour cream and jam. The drier the cheese, the less flour and the more tender the syrniki.

Steps
Steps
- 1If the cheese is wet, wrap it in a cloth and press it under a weight for 30 minutes. Press it through a sieve for the smoothest syrniki, or mash it well with a fork.
- 2Mix the cheese with the egg, sugar, salt and vanilla, then add the 60 g of flour and mix into a soft dough that just holds its shape.
- 3Spread the coating flour on a plate. With floured hands, shape the dough into 12 balls, flatten them into discs 1.5 cm thick, coat them in the flour and neaten the edges with a knife.
- 4Heat the butter with the oil in a large frying pan over medium heat until foaming.
- 5Fry the syrniki for 3–4 minutes on each side over medium-low heat, until deep golden and slightly puffed — too hot, and the outside burns before the middle sets.
- 6Drain briefly on kitchen paper.
- 7Serve warm with sour cream and jam.
