Steps

  1. 1
Make sure the beans are completely dry, or they will spit and steam instead of blistering.
  2. 2
Heat 3 tbsp of the oil in a wok over medium-high heat and fry the beans in two batches, turning them, for 6–8 minutes until the skins are wrinkled and blistered with brown spots. Lift them out.
  3. 3
Add the remaining oil and fry the pork mince over high heat, breaking it up, for 3–4 minutes until crisp, adding the Shaoxing wine and soy sauce at the end.
  4. 4
Add the mustard greens, chillies, Sichuan peppercorns, garlic and ginger and stir-fry for 30 seconds until fragrant; do not let the chillies blacken.
  5. 5
Return the beans with the sugar and salt and toss for 1 minute until they are coated and hot through.
  6. 6
Drizzle with the sesame oil and serve straight away.
