Steps
Steps
- 1Pat the steaks dry and rub them with 1 tbsp of the oil; salt them just before cooking.
- 2Warm the remaining oil gently with the rosemary and garlic for 3 minutes, then turn off the heat and leave to infuse.
- 3Heat a heavy griddle or cast-iron pan over high heat until smoking. Season the steaks with salt and sear for 3–4 minutes per side for rare to medium-rare, standing them on their fat edge for the last minute.
- 4Rest the steaks on a board for 5 minutes, loosely covered — slicing straight away floods the board with juice.
- 5Spread the rocket over a platter.
- 6Slice the steak 1 cm thick across the grain on a slight diagonal and fan it over the rocket, pouring over any juices from the board.
- 7Drizzle with the rosemary oil, add the Parmesan shavings and drops of balsamic, finish with flaky salt and pepper, and serve.
