Steps
Steps
- 1Beat the eggs gently with chopsticks, cutting through the whites rather than whisking in air, then stir in the dashi, mirin, sugar, soy sauce and salt until the sugar dissolves. Strain for a smoother finish.
- 2Heat a square omelette pan or a small non-stick frying pan over medium-low heat and wipe it with oil on a folded piece of kitchen paper; keep the paper for later layers.
- 3Pour in a quarter of the egg and tilt to cover the base. When it is set underneath but still slightly wet on top, roll it up from the far side towards you with chopsticks or a spatula.
- 4Push the roll back to the far side, wipe the empty part of the pan with oil and pour in another quarter of the egg, lifting the roll so the egg runs underneath it.
- 5When the new layer is almost set, roll the first roll back towards you over it. Repeat with the rest of the egg.
- 6Tip the omelette onto a bamboo mat or a sheet of baking paper, wrap it firmly into a neat block and leave for 5 minutes to set its shape. Slice into 2 cm pieces and serve warm or at room temperature.
