Steps
Steps
- 1Cut three deep slashes to the bone in each drumstick and thigh.
- 2Rub the chicken with 2 tbsp of the lemon juice, 1 tsp of the salt and 1 tsp of the chilli powder, working it into the cuts, and leave for 20 minutes.
- 3Mix the yoghurt with the ginger, garlic, garam masala, cumin, coriander, turmeric, oil and the remaining lemon juice, salt and chilli powder. Coat the chicken thoroughly, pushing the marinade into the slashes, and refrigerate for at least 6 hours, ideally overnight.
- 4Heat the oven to its highest setting, about 250°C, with a rack set over a foil-lined tray, and let the chicken come to room temperature for 30 minutes.
- 5Lay the chicken on the rack, shaking off the excess marinade, and roast for 20 minutes.
- 6Baste with the melted ghee or butter, switch to the grill and cook for 8–10 minutes more, until charred in spots and the meat by the bone reads 75°C.
- 7Rest for 5 minutes and serve with the onion rings, lemon wedges and coriander.
