Provencal black olive paste with capers and anchovy — pounded, not puréed.

  • 250 g black olives, pitted
  • 2 tbsp capers, rinsed
  • 4 pieces anchovy fillets
  • 1 pieces garlic clove
  • 80 ml extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tsp fresh thyme leaves
  • 1 tsp brandy (optional)
  • 0.5 tsp black pepper

    Use good oil-cured or brine-cured black olives and pit them yourself. Pre-pitted olives in tins taste of the tin.

    Rinse the capers to take off the excess salt or vinegar.

    Pound the garlic and anchovies in a mortar first, until smooth.

    Add the olives and capers and pound to a coarse paste — it should stay slightly chunky, with recognisable pieces of olive.

    Work in the olive oil gradually until it comes together, then add the lemon juice, thyme and brandy.

    Season with black pepper only; the olives, capers and anchovies bring all the salt there is.

    Rest an hour before serving on toast, with lamb, or stirred through pasta.
