- 500 g plain yogurt
- 2 pieces cucumbers
- 2 pieces garlic cloves
- 50 g walnuts, finely chopped
- 3 tbsp fresh dill, chopped
- 2 tbsp sunflower oil
- 200 ml cold water
- 1 tsp salt

- 1Dice the cucumbers finely, or grate them on the coarse side of a box grater.
- 2Crush the garlic with the salt to a paste using the flat of a knife.
- 3Whisk the yogurt smooth, then whisk in the cold water a little at a time until it pours like thin cream.
- 4Stir in the cucumber, garlic paste, walnuts and dill.
- 5Whisk in the oil last — it should emulsify rather than float.
- 6Chill at least 1 hour. Serve very cold, with an ice cube in each bowl and extra dill on top.
