The cold yogurt soup that gets Bulgaria through August — cucumber, garlic, dill and walnuts in thinned yogurt, served ice-cold.

Ingredients

Serves:4
  • 500 g plain yogurt
  • 2 pieces cucumbers
  • 2 pieces garlic cloves
  • 50 g walnuts, finely chopped
  • 3 tbsp fresh dill, chopped
  • 2 tbsp sunflower oil
  • 200 ml cold water
  • 1 tsp salt

    Dice the cucumbers finely, or grate them on the coarse side of a box grater.

    Crush the garlic with the salt to a paste using the flat of a knife.

    Whisk the yogurt smooth, then whisk in the cold water a little at a time until it pours like thin cream.

    Stir in the cucumber, garlic paste, walnuts and dill.

    Whisk in the oil last — it should emulsify rather than float.

    Chill at least 1 hour. Serve very cold, with an ice cube in each bowl and extra dill on top.
