Beef Kebap
In Bulgarian cooking a kebap is a braise, not a skewer — chunks of beef stewed slowly with a heap of onions, tomato, red wine and cumin until the onions dissolve into a thick, dark sauce around the meat.

Steps
Steps
- 1Pat the beef dry and season with 1 tsp of the salt. Heat 3 tbsp of the oil in a heavy casserole over high heat and brown the beef in three batches, 4–5 minutes each, until deeply coloured; set aside.
- 2Lower the heat to medium, add the remaining oil and the onions and cook for 15 minutes, stirring often, until soft and golden — the onions are the body of the sauce, so take your time.
- 3Add the garlic and tomato purée and stir for 2 minutes until the purée darkens.
- 4Take the pan off the heat, stir in the paprika and cumin, then return the beef with its juices and pour in the wine.
- 5Return to the heat and let the wine bubble for 3 minutes, then add the tomatoes, hot water, bay leaves, pepper and remaining salt.
- 6Bring to the boil, cover and simmer very gently for 1 hour 45 minutes, stirring occasionally and adding a splash of hot water if it catches, until the beef breaks apart under a spoon.
- 7Uncover for the last 15 minutes so the sauce reduces and thickens.
- 8Remove the bay leaves, stir in the parsley and serve.
