Steps
Steps
- 1Pat the beef dry and season it with 1 tsp of the salt. Heat 3 tbsp of the oil in a heavy casserole over high heat and brown the beef in three batches, 4–5 minutes each; set aside.
- 2Lower the heat to medium, add the onions and cook for 8 minutes until soft and golden, adding the garlic for the last minute.
- 3Stir in the tomato purée and flour and cook for 1 minute, then pour in the wine gradually, stirring so no lumps form, and let it bubble for 3 minutes.
- 4Return the beef with its juices, add the hot water, thyme, bay leaves and pepper and bring to the boil.
- 5Cover and simmer very gently for 1 hour 30 minutes, until the beef is nearly tender.
- 6About 10 minutes before that time is up, heat the remaining oil in a frying pan over high heat and fry the mushrooms for 6–8 minutes until browned, then season them with the remaining salt.
- 7Stir the mushrooms into the stew and simmer uncovered for 30 minutes more, until the beef breaks apart under a spoon and the sauce is glossy and thick enough to coat it.
- 8Remove the bay leaves, stir in the parsley and serve.
