Steps
Steps
- 1Rinse the black-eyed peas and sweetcorn under cold water and drain well.
- 2Cut the peppers, onion and tomatoes into a dice about the size of a pea, so every spoonful catches a bit of everything. Deseed the jalapeño for less heat and chop it finely.
- 3Whisk the vinegar, lime juice, oil, sugar, cumin and garlic with salt and pepper.
- 4Combine the peas, sweetcorn, jalapeño and chopped vegetables, pour over the dressing and mix well.
- 5Cover and marinate in the fridge for at least 1 hour, or overnight: the peas take on the dressing as they sit.
- 6Stir in the coriander just before serving and check the salt and lime.
