Steps
Steps
- 1Heat the oven to 180°C.
- 2Squeeze the grated pumpkin firmly in a clean cloth to drive out the water — wet filling makes soggy filo.
- 3Mix the pumpkin with the sugar, walnuts and cinnamon.
- 4Brush a filo sheet with melted butter, lay a second on top and butter it too. Spread a line of filling along one long edge.
- 5Roll into a rope and coil into a buttered round tin. Repeat with the remaining sheets.
- 6Brush the top with the last of the butter and bake 40 minutes until golden.
- 7Cool completely, then dust heavily with icing sugar before cutting.
