The Georgian sour plum sauce — unripe plums cooked down with garlic, coriander and the herb ombalo, served with meat.

  • 1 kg sour or unripe plums
  • 6 pieces garlic cloves
  • 40 g fresh coriander
  • 20 g fresh dill
  • 1 tsp dried pennyroyal or mint
  • 1 tsp ground coriander
  • 1 tsp chilli flakes
  • 150 ml water
  • 1.5 tsp salt

    Simmer the whole plums in the water for 15 minutes until the skins split and the flesh is soft.

    Cool slightly, then push everything through a sieve or food mill, discarding the stones and skins.

    Return the purée to the pan and simmer 20-25 minutes, stirring, until it thickens to the consistency of ketchup.

    Pound the garlic, fresh coriander and dill with the salt into a rough paste.

    Stir the herb paste into the hot purée off the heat — cooking the fresh herbs would dull the sharp, grassy flavour that defines tkemali.

    Add the ground coriander, dried mint and chilli flakes.

    Cool and adjust the salt and heat. Serve with grilled meat or potatoes; it keeps two weeks in the fridge.
